Also today we will have garlic scapes for sale. The scape is the flower stalk that the garlic sends up in spring (garlic is planted in fall and harvested in early summer).  It shoots up straight for a while, then starts to curl. You cut it before it flowers, then use it in any recipe where you would use garlic. I think there are also some recipes calling specifically for garlic scapes. The flavor is garlicky, but milder than actual cloves of garlic. They would be good raw, in salads, or if you made a soup or stirfry, it would be yummy to just throw them in at the last minute so that they barely cook.
